  • 1 cup onion, diced
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup peas, frozen
  • 1 cup corn, frozen
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1/2 cup milk or dairy alternative
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced chicken and cook until browned.
  3. Stir in the carrots, celery, onion, and garlic; sauté until soft.
  4. Pour in the chicken broth and bring to a boil.
  5. Add the peas, corn, thyme, and rosemary; simmer for 10 minutes.
  6. Stir in the milk and season with salt and pepper.
