  • 2 cups rolled oats
  • 1/2 cup honey or maple syrup
  • 1/4 cup almond milk
  • 1/2 cup peanut butter
  • 1 egg
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 cup chopped walnuts or chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mash the ripe bananas.
  3. Add in rolled oats, honey or maple syrup, almond milk, and peanut butter. Mix until combined.
  4. Stir in the egg, baking powder, and cinnamon.
  5. If desired, fold in walnuts or chocolate chips.
  6. Pour the batter into a greased muffin tin.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Let cool before serving.
