Healthier Slow Cooker Creamy Tortellini Vegetable Soup

A delicious and nutritious creamy tortellini vegetable soup made in a slow cooker.

Ingredients

  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 cup diced tomatoes
  • 2 cups carrots, sliced
  • 2 cups spinach
  • 1 package cheese tortellini
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add chopped onion and garlic, sautéing until onion is translucent.
  3. Transfer to slow cooker and add vegetable broth, diced tomatoes, carrots, and seasonings.
  4. Cook on low for 6 hours.
  5. Add spinach and tortellini, cooking for an additional 30 minutes.
  6. Stir in heavy cream before serving.
