  • ½ cup sour cream
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup heavy cream
  • 2 cups powdered sugar
  • ½ cup Irish cream liqueur

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round baking pans.
  2. In a large bowl, combine Guinness and cocoa powder until smooth.
  3. In another bowl, whisk together sugar, flour, baking powder, baking soda, and salt.
  4. Add the eggs, sour cream, vegetable oil, and vanilla to the Guinness mixture, then mix in the dry ingredients until combined.
  5. Divide the batter between the prepared pans and bake for 30-35 minutes.
  6. Allow the cakes to cool completely before frosting.
  7. For the frosting, beat the heavy cream until soft peaks form, then gradually add powdered sugar and Irish cream until well combined.
  8. Frost the cooled cakes with the Irish cream frosting.
