  • 2 tablespoons red wine vinegar

  • Salt and pepper to taste

Instructions

  1. Cook the cheese tortellini according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooked tortellini, cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley.
