2 cups cooked brown rice
1 pound chicken breast, diced
2 tablespoons olive oil
1 teaspoon dried oregano
1 cup cherry tomatoes, halved
1 cucumber, diced
1/2 cup red onion, sliced
1/2 cup feta cheese, crumbled
1/4 cup Kalamata olives
1/4 cup fresh parsley, chopped
Instructions
Heat olive oil in a skillet over medium heat. Add diced chicken and oregano, and cook until chicken is browned and cooked through, about 7-10 minutes.
In a large bowl, combine cooked brown rice, cherry tomatoes, cucumber, red onion, feta cheese, Kalamata olives, and parsley.
Top the rice mixture with the cooked chicken.
