Gnocchi Zuppa Toscana

A warm and comforting soup featuring gnocchi, turkey bacon, and chicken ham, perfect for chilly days.

Ingredients

  • 1 pound gnocchi
  • 4 slices turkey bacon
  • 1 cup chicken ham, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups kale, chopped
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, sauté the onion and garlic until translucent.
  3. Add the chicken ham and cook for a few minutes.
  4. Pour in the chicken broth and bring to a boil.
  5. Add the gnocchi and cook according to package instructions.
  6. Stir in the kale, heavy cream, and Italian seasoning.
  7. Season with salt and pepper to taste. Simmer for 5 minutes.
  8. Serve hot, garnished with crumbled turkey bacon on top.

Notes

  • This soup is best enjoyed fresh but can be refrigerated for up to 3 days.
  • Reheat gently on the stove, adding a splash of broth if needed.
