  • 1/4 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup sugar for rolling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together the flour, ginger, baking soda, cinnamon, and salt.
  3. In another bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the egg and vanilla until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Roll tablespoon-sized balls of dough in sugar, then place them on baking sheets.
  7. Bake for 10-12 minutes, or until the edges are lightly golden.
  8. Let them cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
