- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 tablespoon sugar for rolling
- 1 teaspoon ground cinnamon for rolling
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, baking soda, ginger, cinnamon, and salt.
- In another bowl, cream together butter, granulated sugar, and brown sugar until smooth.
- Add egg and vanilla extract to the butter mixture, and mix well.
- Gradually add the flour mixture to the wet ingredients, stirring until just combined.
- In a small bowl, combine 1 tablespoon of sugar with 1 teaspoon of cinnamon.
- Form dough into balls and roll them in the cinnamon sugar mixture.
- Place on a baking sheet lined with parchment paper and flatten slightly.
- Bake for 8-10 minutes, until edges are golden.
- Allow cooling on the baking sheet for a few minutes before transferring to a wire rack.
Notes
- For an extra kick, add chopped crystallized ginger into the dough.
