Gingerdoodle Cookies

Gingerdoodle cookies combine the warm spices of ginger and cinnamon with the sweetness of traditional snickerdoodles, creating a comforting treat perfect for chilly evenings.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon sugar for rolling
  • 1 teaspoon ground cinnamon for rolling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, baking soda, ginger, cinnamon, and salt.
  3. In another bowl, cream together butter, granulated sugar, and brown sugar until smooth.
  4. Add egg and vanilla extract to the butter mixture, and mix well.
  5. Gradually add the flour mixture to the wet ingredients, stirring until just combined.
  6. In a small bowl, combine 1 tablespoon of sugar with 1 teaspoon of cinnamon.
  7. Form dough into balls and roll them in the cinnamon sugar mixture.
  8. Place on a baking sheet lined with parchment paper and flatten slightly.
  9. Bake for 8-10 minutes, until edges are golden.
  10. Allow cooling on the baking sheet for a few minutes before transferring to a wire rack.

Notes

  • For an extra kick, add chopped crystallized ginger into the dough.
  • Adjust the spices according to personal preference for more or less flavor.
