  • 1 cup cooked turkey bacon, chopped

  • 1/4 cup vegetable oil

Instructions

  1. Peel and grate the potatoes and onion into a large bowl.
  2. Add the eggs, flour, baking powder, turkey bacon, salt, and pepper. Mix until well combined.
  3. Heat the vegetable oil in a skillet over medium heat.
  4. Drop spoonfuls of the mixture into the skillet, flattening them slightly with a spatula.
  5. Cook for about 4-5 minutes on each side, or until golden brown.
  6. Transfer to a paper towel-lined plate to drain excess oil.
  7. Serve warm with your choice of toppings.
