  • 1 cup pumpkin puree
  • 1 cup milk
  • 2 large eggs
  • 2 tablespoons maple syrup
  • 2 tablespoons melted butter

Instructions

  1. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  2. In another bowl, mix the pumpkin puree, milk, eggs, maple syrup, and melted butter until combined.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Heat a skillet over medium heat and pour 1/4 cup of batter for each pancake.
  5. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
  6. Serve warm with maple syrup and whipped cream on top.
