Ingredients

  • 8 ounces pasta of choice
  • 4 slices turkey bacon
  • 1 cup cooked chicken ham, diced
  • 1 cup butternut squash, roasted
  • 1 cup Brussels sprouts, halved and roasted
  • 1/4 cup red onion, diced
  • 1/2 cup dried cranberries
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup walnuts, chopped
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook the pasta according to package directions. Drain and cool.
  2. In a skillet, cook turkey bacon until crispy, then chop into pieces.
  3. In a large bowl, combine cooked pasta, turkey bacon, chicken ham, butternut squash, Brussels sprouts, red onion, cranberries, feta, and walnuts.
  4. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
  5. Drizzle the dressing over the salad and toss to combine.
  6. Serve chilled or at room temperature.
