Easy Walking Taco Casserole with Fritos

This Easy Walking Taco Casserole with Fritos is a fun and easy recipe that the whole family will love!

Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 2 cups diced tomatoes
  • 2 cups Fritos corn chips
  • 2 cups shredded cheddar cheese
  • 1 cup lettuce, shredded
  • 1 cup salsa

Instructions

  1. In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  2. Add taco seasoning, black beans, corn, and diced tomatoes to the skillet. Stir until combined and heat through.
  3. In a baking dish, layer half of the Fritos, followed by half of the beef mixture, and half of the cheese. Repeat the layers.
  4. Bake in a preheated oven at 350°F for 20 minutes, or until the cheese is melted and bubbly.
  5. Remove from the oven and top with lettuce and salsa before serving.

Notes

  • This casserole can be made ahead of time and stored in the refrigerator.
