  • 1 can (13.5 oz) coconut milk
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • fresh basil leaves for garnish

Instructions

  1. In a large skillet, heat some oil over medium heat.
  2. Add the sliced onion and bell pepper, sautéing until softened.
  3. Stir in the garlic and cook for an additional minute.
  4. Add the chicken pieces, cooking until browned.
  5. Mix in the red curry paste and allow it to cook for a couple of minutes.
