  • 1 can coconut milk
  • 4 cups chicken broth
  • 2 tablespoons red curry paste
  • 1 onion, diced
  • 2 carrots, sliced
  • 1 red bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons fish sauce
  • 2 cups spinach
  • 2 green onions, sliced

Instructions

  1. In a large pot, sauté onion, garlic, and ginger until fragrant.
  2. Add diced chicken and cook until browned.
  3. Stir in red curry paste and cook for 1 minute.
  4. Add coconut milk and chicken broth; bring to a simmer.
  5. Add carrots and bell pepper; cook for 10 minutes.
  6. Stir in spinach and fish sauce; cook until spinach is wilted.
