Easy Thai Chicken Curry Soup

  • 1 tablespoon vegetable oil
  • 1 pound chicken breast, diced
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons red curry paste
  • 4 cups chicken broth
  • 1 can coconut milk
  • 2 cups vegetables (bell peppers, broccoli, etc.)
  • 2 tablespoons lime juice
  • fresh cilantro for garnish

Instructions

  1. Heat the oil in a large pot over medium heat.
  2. Add the chicken and cook until browned.
  3. Add the onion, garlic, and ginger; sauté until soft.
  4. Stir in the red curry paste and cook for 1 minute.
  5. Pour in the chicken broth and coconut milk.
  6. Add the vegetables and simmer until cooked through.
  7. Stir in lime juice and garnish with cilantro before serving.

  • Adjust the spice level by adding more or less curry paste.
