Easy Thai Chicken Curry Soup

  • 1 pound boneless chicken breast, diced
  • 2 cups coconut milk
  • 2 cups chicken broth
  • 2 tablespoons red curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 2 cups mixed vegetables (bell peppers, carrots, etc.)
  • 1 cup fresh cilantro, chopped
  • 2 limes, juiced

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the diced chicken and cook until browned.
  3. Stir in the red curry paste and cook for 1-2 minutes until fragrant.
  4. Add the coconut milk and chicken broth; bring to a simmer.
