Easy Taco Soup Recipe

A delicious and easy taco soup that incorporates turkey bacon and chicken ham for a healthier twist on a classic recipe.

  • 1 pound turkey bacon
  • 1 pound chicken ham
  • 2 cups black beans, drained
  • 1 cup corn, frozen or canned
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 tablespoon taco seasoning
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 cup bell peppers, diced

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and chop.
  2. In the same pot, sauté onions and garlic until translucent.
  3. Add the chopped turkey bacon and chicken ham to the pot.
  4. Stir in black beans, corn, taco seasoning, diced tomatoes, bell peppers, and chicken broth.
  5. Simmer for 20 minutes, stirring occasionally.
  6. Serve hot, garnished with your choice of toppings.

Notes

  • For extra flavor, add cilantro or jalapeños while serving.
  • This soup can be made ahead of time and tastes even better the next day.
