  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 stalks celery, sliced

  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 cups spinach, fresh

Instructions

  1. Heat olive oil in a large pot over medium heat.
