Easy Crockpot Tortellini Soup

  • 1 tablespoon olive oil
  • 1 pound turkey bacon
  • 1 onion chopped
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 1 can (15 ounces) diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1 package (9 ounces) refrigerated tortellini
  • 2 cups fresh spinach
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a skillet, cook the turkey bacon until crispy. Remove from skillet and set aside.
  2. In the same skillet, sauté the chopped onion and minced garlic until translucent.
  3. Transfer the onion and garlic to the crockpot. Add the chicken broth, diced tomatoes, and Italian seasoning.
  4. Cook on low for 6 hours.
  5. About 30 minutes before serving, add the tortellini and spinach to the crockpot.
  6. Season with salt and pepper. Stir and let cook.
  7. Serve hot with crispy turkey bacon on top.

Notes

  • This soup freezes well, just prepare without the tortellini.
  • Feel free to add other vegetables like carrots or bell peppers.
