- 1 tablespoon olive oil
- 1 pound turkey bacon
- 1 onion chopped
- 3 cloves garlic minced
- 4 cups chicken broth
- 1 can (15 ounces) diced tomatoes
- 1 teaspoon Italian seasoning
- 1 package (9 ounces) refrigerated tortellini
- 2 cups fresh spinach
- Salt to taste
- Pepper to taste
- In a skillet, cook the turkey bacon until crispy. Remove from skillet and set aside.
- In the same skillet, sauté the chopped onion and minced garlic until translucent.
- Transfer the onion and garlic to the crockpot. Add the chicken broth, diced tomatoes, and Italian seasoning.
- Cook on low for 6 hours.
- About 30 minutes before serving, add the tortellini and spinach to the crockpot.
- Season with salt and pepper. Stir and let cook.
- Serve hot with crispy turkey bacon on top.

- This soup freezes well, just prepare without the tortellini.
