Easy Chicken Taco Soup

  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 4 cups chicken broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup turkey bacon, cooked and chopped
  • 1 bell pepper, diced

Instructions

  1. In a large pot, cook the onion and garlic until softened.
  2. Add the diced bell pepper and cook for an additional 2-3 minutes.
  3. Stir in the shredded chicken, turkey bacon, black beans, corn, diced tomatoes, taco seasoning, and chicken broth.
  4. Bring the mixture to a boil, then reduce heat and let simmer for 20-25 minutes.
  5. Serve hot, garnished with your favorite toppings.

Notes
