Easy Asian Cucumber Salad

A light and refreshing Asian cucumber salad that’s perfect for any meal.

Ingredients

  • 2 medium cucumbers
  • 1 tablespoon salt
  • 1 tablespoon sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1 clove garlic, minced
  • 1 teaspoon sesame oil
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds

Instructions

  1. Slice the cucumbers thinly and place them in a bowl.
  2. Sprinkle with salt and let them sit for 10 minutes to draw out excess water.
  3. In another bowl, combine sugar, rice vinegar, soy sauce, minced garlic, and sesame oil. Stir until the sugar is dissolved.
  4. Rinse the cucumbers and pat dry with paper towels.
  5. Add the cucumbers to the dressing and mix well.
  6. Top with green onions and sesame seeds before serving.

Notes

  • For a spicier kick, add red pepper flakes to taste.
  • This salad can be made a few hours in advance for best flavor.
