Easy Asian Cucumber Salad

Ingredients

  • 2 large cucumbers
  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar
  • 1 tablespoon sesame seeds
  • 1/4 cup chopped green onions
  • 1 teaspoon ginger, grated

Instructions

  1. Slice the cucumbers thinly and place them in a large bowl.
  2. In a separate bowl, whisk together rice vinegar, soy sauce, sesame oil, sugar, ginger, and sesame seeds until combined.
  3. Pour the dressing over the cucumbers and toss to coat.
  4. Add chopped green onions and toss gently.
  5. Let the salad sit for at least 10 minutes before serving to enhance the flavors.

Notes
