  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup whole milk
  • 2 teaspoons vanilla extract
  • 2 cups fresh strawberries, sliced
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine flour, granulated sugar, baking powder, and salt.
  3. Add the softened butter and mix on low until crumbly.
  4. Pour in the milk and vanilla extract, and mix until smooth and combined.
  5. Divide the batter evenly between the prepared cake pans.
  6. Bake for 25-30 minutes or until a toothpick comes out clean.
  7. Allow cakes to cool for 10 minutes in the pans, then turn them out onto a wire rack to cool completely.
  8. Once cooled, whip the heavy cream with powdered sugar until stiff peaks form.
  9. On a serving plate, layer one cake, spread half of the whipped cream, and top with half of the sliced strawberries.
  10. Add the second cake layer, then spread the remaining whipped cream and top with the rest of the strawberries. Serve immediately.

Notes

  • For best flavor, use ripe strawberries.
  • You can substitute whipped cream with Cool Whip if desired.
