Dump and Go Crockpot Vegan Butternut Squash Soup

A delicious and easy vegan butternut squash soup that you can prepare in your crockpot.

Ingredients

  • 1 butternut squash
  • 1 onion
  • 3 cloves garlic
  • 4 cups vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 can coconut milk

Instructions

  1. Peel and chop the butternut squash into cubes.
  2. Dice the onion and mince the garlic.
  3. Add all the ingredients to the crockpot.
  4. Cook on low for 6-8 hours.
  5. Blend the soup until smooth using an immersion blender.

Notes

  • For added flavor, sauté the onion and garlic before adding them to the crockpot.
