  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup unsweetened applesauce
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine grated zucchini, sugar, applesauce, eggs, and vanilla.
  3. In another bowl, mix flour, cocoa powder, baking soda, baking powder, and salt.
  4. Gradually add dry ingredients to wet mixture until just combined.
  5. Fold in chocolate chips.
  6. Pour batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes or until a toothpick comes out clean.
  8. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • For added flavor, substitute some of the all-purpose flour with whole wheat flour.
  • Store leftovers in an airtight container at room temperature for up to 3 days.
