  • 1/2 cup unsweetened cocoa powder

  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda

  • 2 large eggs
  • 1/2 cup buttermilk
  • 1/4 cup vegetable oil
  • 1 tablespoon espresso powder
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the eggs, buttermilk, vegetable oil, espresso powder, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the chocolate chips.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • For an extra indulgent touch, sprinkle some sea salt on top of the muffins before baking.
