Crockpot Lasagna Soup

  • 8 ounces lasagna noodles
  • 1 pound ground turkey
  • 4 slices turkey bacon
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken broth
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 15 ounces ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. In a skillet, cook the turkey bacon until crispy, then chop and set aside.
  2. Add the ground turkey, onion, and garlic to the skillet and cook until browned.
  3. In the crockpot, combine the crushed tomatoes, chicken broth, Italian seasoning, salt, black pepper, and the cooked turkey mixture.
  4. Add the lasagna noodles and stir to combine.
  5. Cover and cook on low for 4-6 hours or until noodles are tender.
  6. Stir in the ricotta cheese, mozzarella, and bacon before serving.
  7. Garnish with Parmesan cheese.
