Crockpot Healthy White Chicken Chili

This creamy and delicious white chicken chili is not only healthy but also easy to prepare in your crockpot.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 can white beans, drained and rinsed
  • 1 can corn, drained
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 4 cups chicken broth
  • 1 cup diced tomatoes
  • 1 cup shredded cheese (optional)
  • 1 avocado, diced (optional)

Instructions

  1. Heat olive oil in a skillet and sauté onion and garlic until translucent.
  2. Transfer the sautéed onion and garlic to the crockpot.
  3. Add chicken breasts, white beans, corn, spices, chicken broth, and diced tomatoes to the crockpot.
  4. Cook on low for 6-8 hours or high for 3-4 hours.
  5. Once cooked, shred the chicken in the pot and stir to combine.
  6. Garnish with shredded cheese and avocado if desired.

Notes

  • For extra flavor, add more spices according to your taste.
  • This chili can be made ahead and stored for busy days.
