- 1 pound boneless, skinless chicken breasts
- 1 can white beans, drained and rinsed
- 1 can corn, drained
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 4 cups chicken broth
- 1 cup diced tomatoes
- 1 cup shredded cheese (optional)
- 1 avocado, diced (optional)
- Heat olive oil in a skillet and sauté onion and garlic until translucent.
- Transfer the sautéed onion and garlic to the crockpot.
- Add chicken breasts, white beans, corn, spices, chicken broth, and diced tomatoes to the crockpot.
- Cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, shred the chicken in the pot and stir to combine.
- Garnish with shredded cheese and avocado if desired.
