Crockpot Chicken Noodle Soup

A warm and hearty soup that’s perfect for cold days and easy to make in your crockpot.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1 medium onion, chopped
  • 2 cups egg noodles
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Place the chicken, broth, carrots, celery, onion, garlic, thyme, and bay leaves in the crockpot.
  2. Cook on low for 6-8 hours or until the chicken is cooked through.
  3. Remove the chicken, shred it, and return it to the pot.
  4. Add the egg noodles and cook for an additional 30 minutes or until the noodles are tender.
  5. Season with salt, pepper, and stir in the parsley before serving.

Notes

  • For added flavor, you can sauté the vegetables beforehand.
  • Feel free to add other vegetables such as peas or corn.
