Crock Pot Loaded Baked Potato Soup

A creamy, hearty soup made with baked potatoes, turkey bacon, and chicken ham, perfect for chilly nights.

  • 4 large russet potatoes
  • 1 cup turkey bacon, diced
  • 1 cup chicken ham, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/4 teaspoon cayenne pepper

Instructions

  1. Peel and chop the potatoes into cubes.
  2. In a skillet, cook the turkey bacon until crispy. Remove and set aside.
  3. In the same pot, sauté onions and garlic until translucent.
  4. Add potatoes, chicken ham, sautéed onions and garlic, chicken broth, salt, and spices to the Crock Pot.
  5. Cook on low for 6-8 hours or high for 3-4 hours until potatoes are tender.
  6. Stir in heavy cream and cheese until melted and creamy.
  7. Serve hot, topped with crispy bacon and sour cream.

Notes

  • For a vegetarian version, omit the bacon and chicken ham.
  • Customize toppings with green onions or additional cheese.
