Crock Pot Creamy Chicken Parmesan Soup

Ingredients

  • 1 pound boneless chicken breasts
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup chopped spinach
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Place the chicken breasts at the bottom of the crock pot.
  2. Add chicken broth, garlic, Italian seasoning, salt, and pepper.
  3. Cook on low for 6 hours or high for 3 hours.
  4. Remove the chicken and shred it with two forks.
  5. Add heavy cream and Parmesan cheese to the pot, stir well.
  6. Return shredded chicken to the pot and mix in chopped spinach.
  7. Cook for an additional 30 minutes on low.
  8. Serve hot and enjoy!
