  • 1 pound boneless, skinless chicken breasts
  • 1 cup chopped carrots
  • 1 cup frozen peas
  • 1 cup chopped potatoes
  • 1/2 cup chopped onion
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 package refrigerated pie crusts

Instructions

  1. Place the chicken breasts in the bottom of the crock pot.
  2. Add the carrots, peas, potatoes, and onion on top of the chicken.
  3. In a bowl, mix the cream of chicken soup, chicken broth, salt, pepper, and thyme.
  4. Pour the mixture over the ingredients in the crock pot.
  5. Cover and cook on low for 6-8 hours or on high for 4-5 hours.
  6. Before serving, prepare the pie crust according to the package instructions and serve it over the hot chicken mixture.

Notes

  • For a creamier texture, you can add a bit of milk to the mixture.
  • Feel free to add other vegetables like corn or green beans.
