1 cup graham cracker crumbs
1/2 cup unsalted butter, melted
2 (8-ounce) packages cream cheese, softened
1 cup granulated sugar
3 large eggs
1 teaspoon vanilla extract
1/4 teaspoon salt
1 cup heavy cream
1/4 cup brown sugar, for topping
Instructions
Preheat your oven to 325°F (160°C) and line a cupcake pan with liners.
In a bowl, combine the graham cracker crumbs and melted butter, then press the mixture into the bottom of each cupcake liner.
In a mixing bowl, beat the softened cream cheese and granulated sugar until smooth.
Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract and salt.
Pour the cheesecake batter over the crust in each liner.
Bake for 20-25 minutes, until the centers are set but still slightly jiggly.
Remove from the oven and let cool, then refrigerate for at least 4 hours.
Before serving, whip the heavy cream and top each cupcake with it.
Sprinkle with brown sugar and use a kitchen torch to caramelize the sugar until golden.
