  • 2 cups tortellini
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • 1/2 cup grated Parmesan cheese
  • Salt to taste
  • Fresh basil for garnish

Instructions

  1. In a pot, cook the tortellini according to package instructions. Drain and set aside.
  2. In the same pot, heat olive oil over medium heat and sauté onions until translucent.
  3. Add garlic and cook for another minute.
  4. Stir in diced tomatoes, heavy cream, and Italian seasoning. Simmer for 5 minutes.
  5. Add the cooked tortellini and Parmesan cheese. Mix well until combined and heated through.
  6. Season with salt to taste and serve garnished with fresh basil.
