Creamy Tomato Gnocchi with Burrata

  • 2 cups cherry tomatoes
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 ounces burrata cheese
  • 1/4 cup fresh basil, chopped

Instructions

  1. In a large pot, bring salted water to a boil and cook the gnocchi according to package instructions. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant.
  3. Add cherry tomatoes to the skillet and cook until they begin to burst, about 5 minutes.
  4. Stir in the heavy cream, salt, and pepper, and bring to a simmer.
  5. Add cooked gnocchi to the sauce and gently toss to combine.
  6. Serve warm, topped with burrata cheese and fresh basil.

Notes

  • For a lighter version, substitute heavy cream with half and half.
  • Add crushed red pepper flakes for a spicy kick.
