Creamy Parmesan Cajun Chicken Pasta Soup

  • 1 pound chicken breast, diced
  • 1 tablespoon Cajun seasoning
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup uncooked pasta
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup bell peppers, chopped
  • salt to taste
  • pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and bell peppers, sauté until soft.
  2. Stir in the minced garlic and diced chicken, cooking until the chicken is no longer pink.
  3. Sprinkle Cajun seasoning over the mixture and stir well.
  4. Add chicken broth and bring to a boil.
  5. Stir in the pasta and cook according to package instructions until tender.
  6. Reduce heat, then add heavy cream and Parmesan cheese, stirring until melted and combined.
  7. Season with salt and pepper to taste before serving.

Notes

  • For extra heat, increase the amount of Cajun seasoning.
  • Feel free to add more vegetables like spinach or mushrooms for added nutrition.
