  • 1 tablespoon Cajun seasoning
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup Parmesan cheese, grated
  • 8 ounces pasta of choice
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, diced
  • 2 cups spinach, fresh
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the diced chicken and Cajun seasoning, cooking until the chicken is browned.
  2. Add onion and garlic, sautéing until the onion is translucent.
  3. Pour in the chicken broth and bring to a boil.
  4. Stir in the pasta and cook according to package instructions until al dente.
  5. Reduce the heat and add the heavy cream, Parmesan cheese, cherry tomatoes, bell pepper, and spinach. Stir until the cheese is melted and the soup is well combined.
