  • 1 pound Italian sausage
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the rigatoni according to package instructions; drain.
  2. In a large skillet, heat olive oil over medium heat and add the sausage, cooking until browned.
  3. Add onion and garlic, cooking until softened.
  4. Stir in heavy cream, Parmesan cheese, spinach, and Italian seasoning. Simmer until the sauce thickens.
  5. Combine the rigatoni with the sauce and mix well.
  6. Season with salt and pepper to taste.
  7. Serve immediately, garnished with extra Parmesan if desired.
