  • 1 pound chicken breasts
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup corn
  • 1 cup black beans, rinsed and drained
  • 1 avocado, diced
  • 1 cup tortilla strips
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sauté until soft.
  3. Stir in the diced tomatoes, chicken broth, cumin, chili powder, and salt and pepper.
  4. Add the chicken breasts and bring to a boil.
  5. Reduce heat and simmer for 20 minutes or until chicken is fully cooked.
  6. Remove chicken, shred it, and return to the pot.
  7. Stir in the heavy cream, corn, and black beans, and cook for an additional 5 minutes.
  8. Serve hot, topped with avocado, tortilla strips, and fresh cilantro.
