Creamy Cajun Chicken Pasta

  • 8 ounces fettuccine pasta
  • 1 pound chicken breast, diced
  • 4 slices turkey bacon, chopped
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon Cajun seasoning
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons chopped parsley for garnish

Instructions

  1. Cook the fettuccine according to package instructions, drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add turkey bacon and cook until crispy. Remove and set aside.
  3. In the same skillet, add chicken, onion, and garlic. Cook until chicken is no longer pink.
  4. Stir in the Cajun seasoning, then add heavy cream and bring to a simmer.
  5. Mix in the Parmesan cheese until melted and combined. Season with salt and pepper.
  6. Add the cooked fettuccine and crispy turkey bacon to the sauce, tossing to coat.
  7. Serve garnished with parsley.

Notes

  • For extra spice, add more Cajun seasoning to taste.
  • This dish can easily be made with shrimp instead of chicken.
