  • 4 large russet potatoes
  • 6 slices turkey bacon
  • 1 medium onion, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 green onions, chopped

Instructions

  1. Cook the turkey bacon in a large pot until crispy. Remove and set aside.
  2. In the same pot, sauté the chopped onion in the bacon drippings until translucent.
  3. Peel and dice the potatoes, add to the pot with chicken broth.
  4. Bring to a boil, then simmer until the potatoes are tender.
  5. Blend the soup until smooth, then stir in heavy cream, shredded cheese, and sour cream.
  6. Season with garlic powder, onion powder, salt, and pepper.
  7. Serve hot, topped with crumbled bacon and green onions.
