Chocolate Raspberry Cake

  • 1 3/4 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup fresh raspberries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a large bowl, mix flour, sugar, cocoa, baking powder, baking soda, and salt.
  4. Add eggs, milk, oil, and vanilla to the dry ingredients. Beat on medium speed for 2 minutes.
  5. Stir in boiling water (batter will be thin).
  6. Pour the batter into prepared pans and bake for 30 to 35 minutes.
  7. Cool for 10 minutes in the pans, then remove to a wire rack to cool completely.
  8. If desired, layer with fresh raspberries between the cake layers.

Notes

  • For a richer taste, consider adding a chocolate ganache topping.
