Chocolate Raspberry Cake

  • 2 cups all-purpose flour
  • 1 and 3/4 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 and 1/2 teaspoons baking powder
  • 1 and 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 2 cups fresh raspberries
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a large bowl, mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  4. Add the eggs, milk, oil, and vanilla to the dry ingredients and beat on medium speed for 2 minutes.
  5. Stir in the boiling water until well combined.
  6. Fold in the raspberries and chocolate chips.
  7. Pour the batter evenly into the prepared pans.
  8. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool in the pans for 10 minutes, then remove and cool completely on a wire rack.
  10. Frost as desired and serve.

Notes

  • For best results, use high-quality cocoa powder and chocolate.
  • Serve with additional raspberries on top for decoration.
