  • 1 tablespoon olive oil
  • 4 slices turkey bacon
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1 bell pepper, chopped
  • 4 cups chicken broth
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (15 ounces) diced tomatoes
  • 2 teaspoons cumin
  • 1 teaspoon chili powder
  • 1 cup corn kernels
  • 2 cups cooked chicken, shredded
  • 1 lime, juiced
  • handful fresh cilantro, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add turkey bacon and cook until crispy. Remove and crumble.
  3. Add onion, garlic, and bell pepper to the pot. Sauté until soft.
  4. Stir in chicken broth, black beans, tomatoes, cumin, and chili powder.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Add corn, chicken, lime juice, and cilantro. Cook for an additional 5 minutes.
  7. Serve hot, garnished with crumbled turkey bacon and extra cilantro.

Notes

  • This soup can be made ahead of time and reheated for meals during the week.
