Chicken Pot Pie Soup

  • 1 pound cooked chicken, shredded
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1/2 cup onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup flour
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons butter

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the onion and garlic, and cook until softened.
  3. Stir in the flour and cook for 1 minute.
  4. Gradually whisk in the chicken broth and heavy cream.
  5. Add the chicken, mixed vegetables, thyme, salt, and pepper.
  6. Simmer for 15-20 minutes, until the vegetables are tender.

Notes

  • For extra flavor, add a splash of white wine when cooking the onions.
  • If you prefer a thicker soup, add more flour or reduce the broth.
