  • 8 ounces penne pasta
  • 1 pound chicken breast, diced
  • 4 strips turkey bacon, chopped
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add turkey bacon and cook until crispy. Remove and set aside.
  3. In the same skillet, add diced chicken breast and cook until browned and cooked through.
  4. Add onion and garlic to the skillet and sauté until fragrant.
  5. Stir in diced tomatoes and Italian seasoning. Simmer for 5 minutes.
  6. Combine cooked penne, chicken mixture, and turkey bacon in a large bowl. Toss with Parmesan cheese. Season with salt and pepper.
  7. Serve warm, garnished with more Parmesan if desired.
