Chicken Enchiladas

Delicious and easy-to-make chicken enchiladas that bring comfort food to your table.

Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup shredded cheese
  • 1 cup enchilada sauce
  • 8 corn tortillas
  • 1/2 cup diced onion
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a pan and sauté onions until translucent.
  3. In a bowl, mix shredded chicken, sautéed onions, cumin, garlic powder, and half the cheese.
  4. Soften tortillas in a dry skillet.
  5. Fill each tortilla with chicken mixture, roll up and place in a baking dish seam-side down.
  6. Pour enchilada sauce over the rolled tortillas and sprinkle with remaining cheese.
  7. Bake for 20-25 minutes or until cheese is melted and bubbly.

Notes

  • For extra flavor, add chopped cilantro to the chicken mixture.
  • Serve with sour cream and guacamole.
