  • 4 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion, carrots, and celery, and sauté until softened.
  3. Stir in garlic and thyme, cooking for an additional minute.
  4. Add chicken broth and bring to a boil.
  5. Once boiling, stir in the rice and return to a boil.
  6. Reduce heat and simmer for 20 minutes or until rice is cooked.
  7. Finally, add shredded chicken and season with salt and pepper.
