  • 2 large eggs
  • 3 cups all-purpose flour

  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar (for rolling)
  • 2 teaspoons ground cinnamon (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together pumpkin puree, granulated sugar, brown sugar, and softened butter until smooth.
  3. Add eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together flour, baking soda, cream of tartar, ground cinnamon, ground nutmeg, and salt.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined.
  6. In a separate bowl, mix granulated sugar and ground cinnamon for rolling.
  7. Roll the dough into balls, then roll each ball in the sugar-cinnamon mixture.
  8. Place on baking sheets lined with parchment paper, about 2 inches apart.
  9. Bake for 10-12 minutes or until the edges are set but the centers are still soft.
  10. Let cool on the baking sheet for a few minutes before transferring to wire racks to cool completely.
